CRISPY SWEET POTATO CHIPS & GUAC



Today I was CRAVING hot chips. And if you're anything like me, you'd know that once that craving hits, there is NO getting rid of it. Working from home, I decided to whip up something quick and simple instead of heading out into the cold winter air to satisfy my culinary urges.

INGREDIENTS

  • 1 x Large Sweet Potato

  • 1 x Avocado

  • 1 Tsp Sweet Chilli Sauce

  • Juice of 1/4 fresh lemon

  • Seasoning for chips - Paprika, Garlic Powder, Roseamary, Cumin

  • Olive Oil

  • Salt & Pepper


METHOD

  1. Preheat oven to 220 Degrees Celcius

  2. Peel and slice sweet potato into thin slices

  3. Lightly coat the baking tray and potato with olive oil and season the with desired herbs and spices. Place in oven and bake for 10 minutes each side.

  4. In the meantime, mash the avocado, sweet chilli sauce, lemon juice and a pinch of salt and pepper together.

Tip - If you let the chips cool off for a few extra minutes, they will become extra crispy!
