This recipe is a game changer! I had a bunch of old bananas that were about to turn on a Sunday afternoon, so of course I had to make a cheeky treat.. Vegan/GF and fabulous! The only danger is trying to stop yourself from consuming the ENTIRE loaf..
1 and 3/4 cups of over ripe mashed bananas
3/4 tsp cinnamon
1 cup coconut sugar
1/2 cup melted coconut oil
1 teaspoon of vanilla essence
2/3 teaspoon baking soda
2 cups gluten free flour
1/4 cup almond milk
1 tsp apple cider vinegar
Optional walnuts/pecans/chocolate chunks
Preheat oven to 170 degrees Celsius
Mix all ingredients in a bowl until smooth
Pour the mixture into a loaf tin. Make sure you have greased the bottom and sides.
Sprinkle optional extra banana slices or nuts ontop.
Bake for an hour, or until skewer comes out clean.
Take out of oven and let sit for 5 minutes.
