This recipe is a game changer! I had a bunch of old bananas that were about to turn on a Sunday afternoon, so of course I had to make a cheeky treat.. Vegan/GF and fabulous! The only danger is trying to stop yourself from consuming the ENTIRE loaf..


  • 1 and 3/4 cups of over ripe mashed bananas

  • 3/4 tsp cinnamon

  • 1 cup coconut sugar

  • 1/2 cup melted coconut oil

  • 1 teaspoon of vanilla essence

  • 2/3 teaspoon baking soda

  • 2 cups gluten free flour

  • 1/4 cup almond milk

  • 1 tsp apple cider vinegar

  • Optional walnuts/pecans/chocolate chunks


  • Preheat oven to 170 degrees Celsius

  • Mix all ingredients in a bowl until smooth

  • Pour the mixture into a loaf tin. Make sure you have greased the bottom and sides.

  • Sprinkle optional extra banana slices or nuts ontop.

  • Bake for an hour, or until skewer comes out clean.

  • Take out of oven and let sit for 5 minutes.
